Depends on how close they are to other NYC cars that weren't included in the 20th CL set.

What are the other NYC cars that weren't included in the 20th CL set?

A business acquaintance told me that a baggage car was added to the consist when the railroad realized passengers’ luggage was too big for the roomettes. I still have the original smoothside NYC add-on set, I can test the color match but I don’t know the prototype for the baggage. I doubt it’s NYC though. I did compare the current TCL RPO with the Rapido baggage, which I have in NYC TTG and is prototypical. Unfortunately there is a vast difference in the color/hue of the light gray stripe.

Would you happen to know during what time period that was the case?
NYC timetables typically stated that the 20th Century Ltd. did not carry checked baggage.

Sadly no, as I am not familiar with NYC practices.

A couple books I have show photos of the 20th C from the 60s (earliest is from 1963), with an RPO/mail storage similar to the Kato set, followed by what appears to be a stainless fluted baggage-lounge or baggage-dorm car.

The 20th Century Ltd did have coach cars added to it in the late '50s, so the baggage car/section could be mainly for use by the coach passengers.
The Kato set is supposed to represent an early '50s consist.

What are the other NYC cars that weren't included in the 20th CL set?

NYC had a very large passenger fleet that wasn't limited to the types of cars included in the set, it's easier to go through the roster to compare the Kato models to what they had.

Kato baggage is ACF built for UP.

Kato's ACF UP/CNW RPO is 85', looks like the closest match is the 1938 PS RPO in the TCL set

NYC also had these, but they are 73'

I would say yes (i.e. ditch them).  That said, I'm in decumulation mode, which means when I get something new I generally try to offload at least as much "stuff."  Now that you have a prototype NYC name train, why would you want to hang on to non-prototypical stuff?  Aren't those old sets the ones without car numbers/names?

The Kato set is supposed to represent an early '50s consist.

NYC roster shows 56 seat coaches built by PS, ACF, and PSC - Walthers PS coach is probably a closer match than the smaller windows on the Kato 44 seat coach.

Of course, the Kato coach might be a decent stand-in if the colors are close enough to the TCL.
