If you treat it as a collection of sub-assemblies or construction groups and don't try to build the KV in one sitting, it does go quickly.  Avoid looking at the big picture, concentrate on the immediate step.  I've found that method to work best for me, learned it building the N Scale of Nevada Piggy Packer kit as that suggestion was in the beginning of the instructions.  It wasn't overwhelming when I performed one group of instructions per night.  Had it built in six nights.

The acid tankcar will be similar in intricacy, as will be the FGE R7 reefer.  But each stage in isolation is not difficult.

NSN Piggy Packer I had to assemble it twice (it fell apart) but I think I learned more building and painting yellow from that model than any other.

NKP didn't have any combines if you look pass the couple of wood sheathed cars that it had early on in the passenger era... and they were 15' mail - coach cars with "Gothic" arched windows.
