Here is mine, nothing too ambitious:

Atlas:   do the centerbeam cars you did in HO

Kato:  Re-run the BNSF H2 C44-9W's.   How about an ES44C4  (FEC, BNSF, ??)

Intermountain:  Deliver as per posted schedule. Then please run those ex-LBF 60' TBOXes

Trainworx:  Re-run the modern UPS trailer

Athearn:  Real acid tanks, and modern 60' boxcars from the HO line

Lets see your list...

For single-road locomotives, I'd nominate my usual Milwaukee Boxcab electrics.

Possibly a better seller would be a QUALITY Nn3 steam locomotive, since the Marklin kitbashes tend to be poor runners, and the few brass locos don't seem to be durable enough for regular service.  A D7RGW K36 would be nice, or one of the EBT large Mikes, since there are several 2-8-2 chassis available in Z that could be used as a starting point.

But really, there's nothing I NEED, and what I want probably wouldn't sell enough to be worthwhile.  Ready to lay code 40 turnouts?

BLI : PRR S2 Turbine in N! (T1 would be nice too)
Kato: Santa Fe Northern 3751! Bolt on nose P42s... Seriously, you make them in HO!
Atlas: GENSETS! And some Arkansas and Missouri Alcos.
Athearn: I have given up on you when it comes to locomotives... So Gunderson 60' Hi cubes.

Well I can dream on all of those really.

I want Blackstone to deliver their K-28.  Based on what I've found, it's giving the N scale PCM/BLI M1 a run for its money in terms of delay.

DaveV:  I'd take an N scale Blackstone K-28!  I'd rather have a K-36/37, but will settle for a K-28.  I know, they're only in HO, but this is a WISH list...

On a more, and less, serious note, I did think of something I would love to see, and that would probably be well received, if it was possible:  The old Walthers decals re-released on modern decal paper.  There were a lot of roadnames there that will likely never be made again.  But I doubt that Walthers kept the artwork, and if they did, I doubt that they'd sell it to anyone willing to print the decals.

A PRR J1 to haul lake coal trains.

Someone to make a H-10-44 shell that isn't made of FUD, since I have a tendency to accidentally break the stuff.

Also a bracket signal kit would be super nice!

60' Hi-cube boxcars (ex LBF tooling, come on IMRC)
Dual hood coil cars ( Red Caboose lineage, is this IMRC related too, as they are on their release page)
54' Thrall coil shield car (ExactRail did them in HO, but probably won't release them in N scale since it seems they aren't doing new N)
IMRC to stick to their schedule.  Getting better with the SD40-2's but still waiting for YN2 to show up (original release date was May), 3281 Trinity hoppers were August 2017, now listed as April 2018.  5161 Trinity hoppers that are also pushed back to April 2018, even though this is a car they already have released in the past.

Does anyone see a pattern with most of these wants ??
