George: Since your yard is to be used, not just looked at, I'd go with the #5s. Almost anything will, or can be modified to, go through a #5 turnout, and a yard needs all the room it can get.I body-mounted the couplers on my MT 89 ft flats by simply cutting the pins that contact the trucks off, and gluing the coupler in place. The only modification needed for them to go through #5 turnouts, coupled to a 40 ft boxcar with body mount couplers, was to trim the side of the arm the coupler is on so the trucks could turn far enough.
In the few spare minutes I had this week, I managed to successfully complete an electronic project!
Posting this here rather than layout build thread for a wider audience:I'm finalizing as much as I can of my East Wayne yard. Not sure if I should use Atlas #5 or #7 turnouts for the yard ladder (already decided not to hand-lay turnouts). In general, I tend towards the largest frog I can manage, but in this case I loose a fair amount of yard tracks - pretty much 6"-to-9" on each track. Here's a comparison in SCARM (#7 on the left, #5 on the right) - thoughts appreciated. (Attachment Link) I like the fact that you.oncluded a wheel track, don’t forget to provide forklift access.

@nickelplate759 These are my thoughts on your yard ladders, leave the #7 at the top. Especially if the yard is switched from that end. You don't add much body track length with the compound ladder. Use #5 on the bottom ladder where it would help maximize yard capacity. Just my 2 cents Michael
