For the waffle side car, my first guess would be splicing a couple of Exactrail cars or possibly MDC cars.

Wouldn't another option be to find the existing model(s) with the correct roof/ends/doors/underframe, and then either etch or rapid prototype the sides?
That would be an option - if I had cad skills to draw the sides.
