The only way to find out is to cut some and see!  The biggest problem is that, even if they look good fresh, some woody plants warp as the dry.  The nice straight logs might not be in a year or so.

Good call. I wonder if I could hang them and put weights on them for a long time while they dry?

Just let the twigs dry out naturally a month or  longer.  That is what I do after I collect mine from my yard.  I put mine in a plastic tray and place it in the attic, as it gets pretty hot there in the Summer, but any place that gets warm should work.
