One major upside to Micro-Trains---- when something sells, they make more.

Micro Trains could probably design injection-mold a similar (smaller, geared for the hobby market) fixture out of Delrin.  Your cost would be much cheaper than the custom-machined metal one they use.  But I suspect the market for unassembled couplers is so small that producing and marketing such assembly fixture would not be very profitable.
You are probably right about the market for unassembled couplers.  I would not do it myself, but with the number I have needed over the years, I think the cost saving vs buying assembled couplers has probably paid for most of my Kato F units.

The more modern TTX scheme, CN and CSX are already announced and in the pipeline.  See if you can still pre-order somewhere, or stalk MTS 24/7 anytime there is word about them hitting the street

I'm also interested to see what happens to the pricing of the LBF models.  Esp the TTX versions, they go for $40-60 a piece sometimes

If you miss it keep looking on eBay and googling for smaller hobby shops online.  I ordered mine from House of Trains in Omaha (still waiting for it to arrive) but I probably got the last one, they say they're sold out now.

They'll probably drop to about $30, is my guess.  I mean, with the MT street price at over $30, and still plenty of demand, they won't become worthless.
