What other items from a 1960s Land O' Corn consist have not already been made?

It's been a while since I've looked, but I think the biggest things are the Torpedo Tube GP9s and the 56 seat coach.  I think the 70' baggage car can stand okay (if not correct) in but I didn't get any when they came out since there wasn't a flexi-van.  :P  Could also use a baggage with clerestory roof.  I'm sure there're some other express baggage cars but I probably wouldn't get to particular about those.

This is the coach if anyone knows a match.

It's more than a little work, but if you want a correct model it's the way to go.

You might consider one of the Walthers smooth-side coaches (really NYC prototype) as a standin.   Since the Flexi-van Car isn't the exact proto either (weren't the IC cars Mark II?), a little more fudging won't hurt.
I'd include at least one of the Wheels-of-time 60' round-top baggage/express cars.

I have some Union Station stuff and would probably opt to etch the sides out of metal first.

I'll have to keep my eyes out for the WoT 70' express cars as they seem pretty scarce.  I'm recalling now being on the fence when they came out.

The Chicago, Burlington and Quincy had 25 of them!

BUT: Are the models offered prototypical? I always thought the Q had Mark III models. (I might be wrong.)

While not as nice a model as the Kato E8, Life-Like did IC E8s in the 1960s scheme.
Even less nice a model would be an old Roco/Atlas E7 in the 1960s scheme.
Atlas did do an IC TT GP7, but it was about 10 years ago.

If you had too, sure.  But by the mid-60's, the GP9s were the normal power for the the Iowa Division trains (Land O' Corn, Hawkeye and even the mail trains I think).  I'd say they were even more symbolic of a late 60's Land O' Corn than the Flex-Vans.

Maybe @Atlas Paul  can put it on the idea board.  :)
