But - what is the right tool - etc... to get a level sanding of something like the bolster? I always feel I am off a little and end up with a slightly tilting car. There must be a systematic way of doing this.

I finally got the correct tool... a lathe with a milling attachment!

It is a drill press, but with heavy duty bearings to be able to take a load sideways.
