No former Pullmans were involved in the making of the streamlined coaches that B&O did though there were also sleepers that the line did modernize that kept their previous interior layout... everything rblt. as coaches were originally coaches.  The few Pullman sleepers that were transferred to coach service lost their name but had no changes at all made to them other than removing the linen from the various closets.

Reading coaches, link Central of New Jersey, had 18 windows between the two bathroom windows where the majority of single-window coaches have 20.  The modernized cars were shorter than the 20-windowed single-windowed coach so the length will have to be cut down if it is to look appropriate.  Using Rapido's Canadian National cars (though costly) could yield a good model just as windows from a variety of Kato cars though it will still be necessary to build a new roof (maybe from parts of the clerestory roof cars with the clerestory cut out and lowered).

Erie did not roster any Plan 4042 cars.  Cars were rostered by ACL, FEC, PRR, Frisco and SOU, with 12 cars, roughly half the roster that Pullman rebuilt, going directly to scrap after ending service for Pullman.

I think the Erie car, like the LN cars of with 10 sec 1 DR and 2 DBR, may be a 4074 rather than a 4042.  You are the expert, but a quick check of files on my computer indicates that a 4042 is
10 sec 1 Cmpt  2 DBR ("College" series)

According to the passenger car roster here: http://www.rr-fallenflags.org/el/pax/erie-1954.html  Erie had one car of that arrangement

H - 10 Sec, 1 DR Rm, 2 DB BR - Scenic Island   

It also shows up in the 1947 consist for the Erie Limited that is shown on the wiki page https://en.wikipedia.org/wiki/Erie_Limited  (still under Pullman ownership, I assume, in 1947)

Regarding the pediment ends, I checked and see that the MTL diner does NOT have them, but the MTL parlor car does.  Strangely, a prototype photo of a B&O diner showes a pediment end.  SOOO, depending on your prototype and urge for modeling perfection, you may or may not need to modify to get pediment ends where MTL did not provide them or vice versa.

The modification of the roof end does not look that hard to do, compared to cutting and splicing roofs to get 2 ends of the proper type on the same roof.  Of course, if you need to cut and splice to get the needed length, then selecting the proper ends from 2 MTL "business car balloon roofs" is the obvious way to go.  In that regard, it seems like these MTL balloon roofs provide good a good source of kit bashing materials for everybody.
