I'm starting to inventory all my freight cars (to determine what I have/need for the future layout).

Here's the data I'm capturing, and some examples:

I also have on mine (Mysql database with GUI) The last 6 are because I also use the database for layout operations so the dispatcher knows what is where in live time.   I also have the non layout fields Road Name, Road Number, Type, etc on another query so that while I am at shows or stores I can access it via my Blackberry to make sure I'm not buying repeat numbers...etc...

I spread my jewel boxes out on a shelf. When I want a car it is right there with the label facing out.  :-*

I've got an XL sheet that lists:
Date In, Road Name, Class (Car Type), Road Number, Rtn Empty To, Interchange, Lading, Mfr (model), Coupler, Update Date, Owner, Source (where I got it from), approx. value.
When I was at John's yesterday, he showed me the program he's using, a free download from somewhere, which I'm hoping he remembers to send me the link, like I asked! :D

Seconded, Also no BN, SP, or DRG&W...

I actually did mine on pencil and paper (from memory, so it wasn't complete) while I was sitting through some of my classes. I've used Dallas Model Work's free one since it looks nicer than an exhell sheet.

I don't even bother with the boxes. My cars are placed in the "cells" of foam-lined drawer "workbooks." When I open a drawer, the cars are arranged in road name order, with all pertinent information displayed, and no need for typing anything.
